I’m sure many of you ASD moms know, that having a child on the spectrum, sensory issues are huge. Especially when it comes to breakfast, lunch and dinner. Noah is all about chicken nuggets, like it’s pretty much a staple here in the Wilson house. As much chicken nuggets as he eats, I knew I couldn’t constantly give him processed nuggets. I needed to figure out a healthier option. In comes Quinoa Chicken Nuggets. I always get worried trying new things, because Noah will literally know if I change the brand of nuggets and he will not eat them. So it’s always a bit stressful when I try something different.
This is a super easy recipe, with a total prep and cook time of 30 minutes! Which is great after a day at work and you don’t wanna be in the kitchen for a long time.
The recipe is as follows:
-3-4 boneless skinless chicken breasts, cut into 2-inch pieces. (You could also cut them into strips!)
-2/3 cup of flour
-1 teaspoon salt + 1/4 teaspoon pepper
-3 eggs + 2 tablespoons of water
– 2 cups of cooked Quinoa
1.Preheat oven to 425. Grease baking sheet (I used Organic unrefined Coconut Oil)
2.Dredge chicken pieces in flour. Then eggs. Lastly in quinoa and coat well. Place on baking sheet.
3.Bake for 15-20 minutes. Nuggets should be cooked thoroughly and browned.
4.Serve with your favorite dipping sauce! (Noah loves his ranch!)
This recipe was a hit with Noah! He gave it a bug thumbs up and made this mama super relieved and super thankful that we have another meal to put into our small rotation!
